Sour Cherries cheesecake

Hello guys! 
Long time, no see yada yada. I hope you all doing well and dandy. 
Today I'm gonna share with you a Divine cheesecake recipe 
(originally fount here by the awesome Kaede)

The recipe is super easy if you own a mixer (if not you must be prepared to mix by hand so much, you'll need a psysician afterwards :P)

Ingredients:

  • 2 packs Πτι Μπερ biscuits (digestive will do as well)
  • 200g unsalted butter
  • 1 pack Philadelphia cheese cream or any other cheese cream.
  • 1 1/3 cup Vegetal Cream (not the small teacups)
  • 1 jar sour cherry compost 
  • 4tbsp icing sugar
  • 3tbsp white sugar (I didn't use this at all)
  • 3tbsp corn flour
First we finely crush the biscuits and mix them with the melted butter.We spread the mixture into a big pyrex (or two medium in my case). As Kaede mentions, you shouldn't press too hard while spreading the mix, or you'll have a difficult time cutting the cheesecake once it's ready. Remember, you'll gonna have to leave it for about a day into the fridge, yeah?

In one bown we mix the cheese cream with 2tbsp of the icing sugar using always the mixer.

In another bowl we make our whipped cream using the vegetal cream and the other 2tbsp of the icing sugar. Now here, we mix for about 5 minutes and until we have a solid mixture. We then stir those two creams together.

We spread our whipped cream and cheese cream mixture on our biscuit base.


Now we straing our cherries (keep the syrup) and spread them on the cream.
In a pot we put about 1 cup of our syrup (we keep 1tbsp in a cup)
We mix the corn flour with the 1tbsp of the syrup (you can't mix the corn flour with warm syrup cause small lumps will be created). After we have soluble the corn flour into the cold syrup, we pour it into the pot and stir well. If needed we add some water until it's not too thick. 

We pour the syrup all over our cheesecake and put it in the fridge for at lease 6 hours!

ps. I really wanted to upload a picture with just a piece on a plate BUT, I didn't have tha change to take a pixture. When I woke up the next day, the cheesecake was gone and all that had left was a tiny piece, enough to take an idea of how wonderful it was!
